Ingredients:

  • 2 kg red baby potatoes, cut into 1 cm slices
  • 2 tablespoons of extra virgin olive oil
  • 50g butter (can be vegan)
  • All-purpose seasoning
  • Salt and pepper
  • 1 to 2 tablespoons of honey (depending on the sweetness you want)
  • Fresh thyme leaves for garnish (optional)

Method:

  1. Bring a pot of water to a boil and add the potatoes. Cook the potatoes for 4 to 5 minutes until they are tender but not mushy – you want them to hold their shape and not fall apart.
  2. While the potatoes are cooking, preheat the oven to 200 ° C. Put olive oil and butter on a baking sheet and put in the oven for two minutes until the butter is melted.
  3. Add the drained potatoes and turn the potatoes in the oil to make sure they are well coated. Season with all-purpose seasoning, salt and pepper. Make sure the potatoes are distributed evenly and do not overlap. This will allow maximum crunchiness, so if you have to use two trays, do so.
  4. Bake the potatoes for 30 minutes, then turn them over and cook for another 25 to 30 minutes until crispy. Note: This time is just a guide, so if your potatoes don’t look crispy at 30 minutes, continue cooking until golden brown.
  5. Drizzle the potatoes with honey (or maple syrup) while they are hot and garnish with fresh thyme.
