Quark Expeditions Launches Industry’s First Exclusive Inuit Dining Experience


“Quark Expeditions had the honor of visiting the Inuit lands of Greenland and Nunavut for 30 years ”, says Alex mcneil, Director of Expeditions Experience and Innovation for Quark Expeditions. “And for over a decade, I have had the pleasure, as a member of the Quark Expeditions team, to visit these regions and develop meaningful relationships in local communities. These relationships inspired us to provide this platform, From the tundra to the table: the Inuit dining experience, for Inuit chefs in the Arctic to showcase their cuisine and their culture of Greenland and Nunavut. The ultimate goal of this dining experience is to support local chefs as they share the stories of their people through food. “

Among the strengths of “Tundra to Table: Inuit Culinary Experience”:

  • Customers will savor food in its purest and most natural state.
    At the heart of this experience is the purity of ingredients, such as seafood caught in arctic waters and wild game that consume naturally organic grass and vegetation. The types of dishes that could be served during this on-board experience include: beer-braised musk beef served with Greenlandic mashed potatoes, mushroom sauce and berry jam; Lamb from southern Greenland served with Anna potatoes (layers of sliced ​​potatoes), mild turnip stew, marinated angelica and wild sauce; honey-glazed ptarmigan served with turnip puree; and marinated halibut served with lumpfish dip and bread.
  • Program led by Inuit chefs who are experts in Indigenous cuisine.
    Guests will enjoy modern Inuit fusion style cuisine with dishes reflecting the culinary traditions of the region of their trip, from muskox to Greenland or arctic char in Nunavut. Local chefs will share the history of their people through the food they prepare.
  • This is the only Inuit dining experience of its kind.Quark Expeditions is the only polar operator to offer this type of culinary collaboration with local Inuit chefs, which will only be available on certain 2022 and 2023 Arctic trips.

Quark Expeditions will present another culinary opportunity starting in the Arctic season 2022. Guests will have the opportunity, on select trips, to accompany Inuit chefs in their foraging for food in the wild. During selected hiking tours led by members of the Quark Expeditions team, Inuit chefs will accompany the group and share their knowledge of foraging, talk about arctic plant species and explain how they are used in traditional Inuit cuisine. The chefs will harvest small amounts of plants and herbs to use as part of the Inuit dining experience on board.
