Couple behind Zymarium mead share their love of fermented honey

Ginger and Joe Leigh love to talk about mead. It started as a hobby for the couple, then turned into a passion and they now hope to turn Zymarium Mead into a business.

“I really fell down the rabbit hole and got obsessed with the science of fermentation and the art of making mead and just started making tons and tons of batches and trying to perfect everything, ”said Joe Leigh.

The two have been making mead since 2014. Since then, they have featured their concoctions in numerous mead contests and showcases.

“That’s actually what really drove me to make mead is that I started signing them up and winning them and then I ended up being a few (of competitions) at 30 or 40, “said Joe Leigh.

At present, Zymarium is still in its infancy. The couple are working to secure a space license for their dream tasting room. They also raise funds through a IndieGoGo campaign.

As they work towards their goal of opening Orlando’s first mead, they are still working outside of the world of fermented honey, but that work is definitely reflected in Zymarium.

“Actually, I’m going to design the tasting room. I’m an interactive designer, so that’s what I do professionally. So for both of us to collaborate is really an amazing opportunity because we combine mead – which is mainly his talents and expertise – with my side, which does interactive design, ”said Ginger Leigh.

She designs and creates art installations across the country and the world under the name Synthestruct. It plans to have a permanent facility inside the Zymarium Meadery once it is operational.

Joe Leigh works professionally as a software engineer. He puts these talents to use when working on his mead recipes, including their most award-winning variety, “Nostalgia for Infinity.”

“I made this mead at least 30 different times – each time I was learning something new, tweaking the recipe, just changing one variable, doing five times five at the same time with a different variable each. , because I’m a software engineer, so I have to be very specific about my changes, ”he said.
