CONRAD NASHVILLE ANNOUNCES THREE NEW F&B CONCEPTS

Blau and Canteenwalla are happy to introduce you Blue Aster, The Blue Aster lounge and Thistle & Rye to Music City’s exciting culinary scene. blue aster, the Conrad Nashville’s main restaurant, hosts seafood-centric American cuisine and innovative Southern flavors with modern sophistication, style and world-class hospitality. Adjacent to the restaurant is the Blue Aster Lounge, offering elegant classic cocktails and luxurious afternoon tea service. Thistle & Rye, located on the third floor of the hotel, is a dynamic beverage-centric concept featuring globally inspired small plates to share. Award-winning design agency Champalimaud brought the three concepts to life, with intricate, bespoke architectural elements and opulent textiles, blending modern luxury with natural simplicity.

BLUE ASTER
Offering an innovative twist on modern American cuisine, the restaurant’s seasonal menus will focus heavily on a farm-to-table approach, sourcing most ingredients from local and regional vendors and farms, as well as a selection of fresh seafood and a variety of local products. ranch steaks. Blue Aster will serve breakfast, lunch and dinner daily in addition to a signature weekend brunch. Dinner will include items such as hot stone ahi tuna, root vegetables Wellington, Maine Lobster pie and macaroni and cheese waffles.

THE BLUE ASTER LOUNGE

THISTLE & RYE
On the third floor of Conrad Nashville, Thistle & Rye guests will enjoy live music, an indoor-outdoor bar, large patio and windows overlooking the bustling downtown Nashville. The menu, inspired by Blau and Canteenwalla’s extensive travels, features international street market dishes like sugar cane shrimp skewers, pork belly bao buns and pomegranate-glazed lamb kofta, as well as accessible classics, including from Nashville Famous hot chicken sliders and fresh lobster rolls.

Reserved for hotel guests, the Pool deck at Conrad Nashville draws inspiration from the menu at Thistle & Rye, alongside homemade ice cream, alcoholic popsicles and craft cocktails.

SOUTHERN HOSPITALITY, REDEFINED
Blau and Canteenwalla met when he was executive chef of the Beau Rivage Resort & Casino in Biloxi, Mississippi, and from there, the duo spent time touring the area and developed a shared passion for the treasured flavors and traditions of the South. Today, many of these culinary inspirations are reflected in the menus and branding of their restaurant concepts.

Joining Blau and Canteenwalla, Conrad Nashville is also pleased to announce the appointment of Executive Chef Dwayne Edwardsbringing over 30 years of experience in the kitchen and previously serving as Executive Chef at multiple Ritz-Carlton hotels across United States. Director of Food and Beverage Jean-Christophe Le Varrat also brings his talents to the table, with 35 years of experience including the iconic Beverly Hills Hotel, Casa del Mar Hotel and most recently leading the famed hotel’s food and beverage team Shutters on the Beach in Santa Monica.

Elisabeth Blau is the founder and CEO of restaurant development company Blau + Associates and is widely credited with transforming Vegas into the world-class culinary destination it is today. His work creating the Bellagio and Wynn restaurant portfolios forever transformed the city’s food and beverage philosophy. A judge on CNBC Restaurant start-upit also operates several restaurants in Vegas and Vancouver with her chef husband Kim Canteenwalla. Blau and Canteenwalla co-wrote “Honey Salt: A Culinary Scrapbook”, which was named best cookbook of 2018 by Food and drink magazine.

ON KIM CANTEENWALLA
Chief Kim Canteenwalla offers a diverse range of international expertise with over 30 years of culinary and industry leadership. He has run restaurants and resorts around the world, including Singapore, Bermuda, dubai, Cambodia, Torontoand Montreal, and is the former executive chef of the MGM Grand in Las Vegas. With his wife Elisabeth BlauKim is the chef-owner of the famous Vegas restaurant Honey Salt and managing partner of Buddy V’s Ristorante at The Venetian. In 2017, Kim conceptualized and developed several world-class food and beverage outlets in Vancouver, Canada which he continues to operate today.
