Boucher to move into Freddy’s former location in Denison

A new butcher shop and barbecue will soon be moving into one of Denison’s recently vacated restaurants.

Representatives of Heritage Butchery & Barbeque on Thursday announced plans to convert the former Freddy’s Frozen Custard & Steakburgers store into a new butcher’s shop that will showcase local offerings from the area.

The butcher shop will offer products made locally in the Texoma region, including honey, eggs, cheese and seasonal produce. On the restaurant side, the butcher’s barbecue, sausages and burgers will also be made with local ingredients from producers who care about sustainability, said managing director Pete Gonzales.

Beyond the sale of beef and other animals, Gonzales said plans are in place to also offer limited processing services for deer during the hunting season. He said it would be limited to one job at a time to ensure product quality.

“When you walk into the butcher’s shop, you look to your right and you’ll see the market,” Gonzales said. “You will see the windows, the guys in the cutting room, the products.

“Then, as you go into the restaurant, you’re going to pick up on the barbecue side. You will see the block where they cut all the protein. You will see the line where all the sides are. It’s a good combination of the two. “

The idea for the butcher’s shop had been in the works for years, said Gonzales, who has long wanted to start a butcher shop with local produce. From there, he met restaurateurs Brad and Stephanie Hammett, who helped make those plans a reality.

“The concept of our store began to materialize in a quiet corner of a church hall,” Stephanie Hammett said in a press release. Introduced by a mutual friend and local breeder, an experienced butcher with a heritage in the food industry and doctor with a particular fondness for butcher shops began to dream of what they could build together for the Texoma community.

Gonzales said he and the Hammett’s started looking for a location in the area, but struggled to find a space that would meet their needs.

“We looked everywhere – we looked at Sherman, downtown, downtown Denison, we even looked at empty new developments,” he said.

The company helping with the site selection generated a list of possible locations. At the bottom of the list was Freddy’s old site, which was ultimately chosen.

Gonzales said the site requires minimal repairs as it is still a new build. The biggest change, aside from the decor, will be the installation of a new cutting room for processing meats, he said.

The Denison Development Alliance has announced that it will help the project financially through a micro-manufacturing grant. The DDA offers incentives valued at $ 37,500, or about 15% of the planned cost of the project.

Gonzales has said he hopes the store and restaurant will open in late spring or early summer 2022.

Freddy’s closed the doors of its Denison location just south of Walmart for the last time in September, leaving behind a vacant apartment building on one of the city’s main gateways. The restaurant opened and began offering its iconic frozen delicacies just three years before it closed.
